The temperature change required to alter a microorganism's D-value by a factor of 10 during thermal sterilization.

The Z-value is a critical parameter in sterilization science that quantifies the temperature dependence of microbial death rates. It represents the number of degrees Celsius required to change the D-value (decimal reduction time) by one log cycle, or a factor of 10. This measurement is essential for developing and validating sterilization cycles, as it helps determine equivalent sterilization exposures at different temperatures. For steam sterilization, typical Z-values range from 7-10°C for vegetative bacteria and bacterial spores.
